I am currently working on a large 2-sided sign made out of Port Orford Cedar - the letteres will be V-Carved and painted - normally I would use a spar varnish over the entire sign when completed...wondering if there might be a better product??? Thank you.

Epifanes. Expensive but the best.

Kurt's suggestion of Epifane is a good one, as it is one of the best 1 part varnishes out there.
The steps up require mixing with reducer. Allwood by Awlgrip is a terrific product but I would check with them regarding compatibility with your paint.
It is a cross linked urethane and will last longer than traditional varnishes.

I have not found any clear to cover cedar in a northern tier climate and last for more than a year or 2. I have entirely switched to sickens log and siding with 2 coats for a flat and 3 coats for a gloss finish. Sand between coats 2 and 3 for gloss. Cedar must be supported vertically (not hung from eyebolts) to prevent warpage on large signs. Bob

Perhaps there is a superior product but haven't found it yet.

Clear epoxy with UV inhibitors may be an option. It's the same kind of stuff used on surfboards. Epoxy...NOT polyester.

I'd absolutely love see signage coated with epoxy. My attempts were losers. Can't be sprayed.

plus epoxy runs really badly so it is impossible to do vertical.
