They want them made of wood. I was going to try pine. They want the cross guard to be a part the pommel to be another part with a fuller on both side of the blade. The cross guard can be 2 parts that can fit together over the blade and glued together. The pommel should be able to be glued at the top of the sword.
Of if you can come up with a sword that is one piece I can flip the wood from one side to another. It does need to look something like the one in the photo

Not sure if this is a cnc job, I would use tablesaw, sander, band saw, ect.
Or you could 3D carve them in 2 halves and glue them together.

doing a play 3d carving for a piece that will be seen from afar is a bit overkill. I would not do them out a of solid wood, I would do them out of ply (3/4 inch cabinet). My 2 cents worth, spend wisely! :D Russ

Easy enough to do the hilt and pommel face down in two pieces with mortise for the blade and a flip for the blade.
"Sharpening" of the blade should be a post SB op though.
PM or email me if you still need some help.

To shape it use a 1" belt sander... i sharpen wooden Knives all the time... once you have the hang of it.. you can spit them out fast.
