I received a order for a sign today to be made out of Pollytone 16" x 8' x 3/4" with 6" tall letters and 4" numbers would you V carve it or use a 1/4" solid carbide bit?

IMHO V-Carving always has more eye appeal than just a straight carving...

If the font is very "broad" the V-Carving may go too deep. The font will also decide if your 1/4" bit is too big - you may need a smaller bit for better definition in the corners. If your material is not flat then a straight bit is easier than V-Carving. It is not a simple decision, but it does depend mainly on the font and the flatness of the material.
