Process Question

I'm new to making signs and have a customer wanting a v carved sign and it will be painted. My question is would it be best to make the sign to size then paint, cover with mask (what brand works best) then v carve and paint letters? Also what is the best wood to use for this kind of sign?

David a little more details about the sign would be helpful. size, indoors, outdoors, 3d, 2d

The sign is going to be used for sides on a restored pick up truck, so out doors. They want it all painted with V Carving.
