INLAY OFFSET ?

How do I make the cavity a few thousandths larger than the inlay? I would cut the inlay out using a profile toolpath and the inlay cavity would be cut using a pocket. What function allows me to change the size of either the pocket or profile?

on your profile or area clear toolpaths, there is a setting for "allowance." Say if you want to make your inlay slightly smaller, make the profile allowance -.02. That should do the trick.
