like gary says .25 thick corian like this:
http://cgi.ebay.com/12-Pcs-1-4-x11-75-x-13-5-Bone-Corian-Sheets_W0QQitemZ290262942829QQcmdZViewItem?hash=it em290262942829&_trkparms=72%3A1205%7C39%3A1%7C66%3 A2%7C65%3A12%7C240%3A1318&_trksid=p3286.c0.m14
only this guys price is rediculous. I bought some off him a year or so ago and paid about $1.00/piece, now he wants about $8.00/piece
Go to a local countertops guy and ask for scraps and make him something and take it back, you'll get all you want for free after that usually.

I have gotten excellent results with UHMW and HDPE plastics. 1/4" or 1/2" thickness. 1/4 is best for most purposes, but 1/2 will give slightly better dark tones. and can be more interesting if viewed from the cut side.
